Apple-Cinnamon Oatmeal Pancakes and Cinnamon-Cocoa-Peanut Butter-Flaxseed Banana

For a delicious and healthy breakfast.



For the pancakes you will need:
1/4 cup oatmeal
1/3 cup milk
1/4 cup grated apple
1 egg
2 teaspoons wheat germ
1/2 teaspoon cinnamon
1/4 cup whole-wheat pancake mix* (recipe below)

In a medium bowl, mix the oatmeal with the milk and set aside for 5 minutes. After the 5 minutes have passed, add the grated apple and the egg to the oatmeal mix and stir well. In a separate bowl, mix together the wheat germ, cinnamon and whole-wheat pancake mix. Slowly add the dry mix to the wet one, stirring until well combined. 

Heat 2 tablespoons of olive oil or canola oil, whichever you prefer, in a medium skillet. Add 1/4 cup of the batter for one pancake, meaning at the end you'll have 4 medium pancakes. Serve them with 1/2 cup of yogurt and the banana.

For the Cinnamon-Cocoa-Peanut Butter-Flaxseed Banana you will need
1 banana, cut in half
1 tablespoon peanut butter
1 teaspoon cocoa
1 teaspoon cinnamon
flaxseed
honey

In a small container, mix together the peanut butter, cocoa and cinnamon. Spread it on the banana, add some flaxseed and some honey if you want.

Lunch: spicy chicken wings and crunchy chicken thigh with green beans

*Whole-wheat pancake mix
2 cups whole wheat flour
4 tablespoons sugar
1/4 cup powdered milk
1 teaspoon baking soda
2 teaspoons baking powder
salt

You can store the rest of the mix in a jar and use it when you want. You only have to measure 1 cup of mix and then add one egg and 2/3 cup of water or milk to it. Stir until just combined and then make the pancakes! You'll get about 8 pancakes.
